Sunday I kept thinking about a Sweet-Potato Strawberry purée, either as an ice cream or a sorbet. I have no idea how to make the base without some kind of juicer but it should be done.

I feel like such a wimp for suggesting something I can't produce myself, but I'm glad to see it can be done.

If you can make mashed potatoes from scratch, then you can do this recipe. What you have in mind is basically mashed potatoes with strawberry and extra cream.

The more I think bout it, the more I think using chopped strawberries as a mix-in at the end would be easier than strawberry juice. That way you only have the sweet potato, milk and cream to deal with in getting the mix to freeze to the right consistency.
