A good Baitcon

Baitcon thoughts:

First off, yay! to JB, Kimberly, and the rest of BCC!

+ I got an ice cream (Dulce de Leche) onto the "best" chart for once -- five votes, even!
+ the stove I brought (coleman fuel 2 burner) worked perfectly
+ friends everywhere!
+ except for some minor rain, beautiful weather for most of the weekend
+ I startled, twice, a small fawn while setting up on Friday, a beautiful creature.
+ The feedback on my other flavor, cinnamon oil and cinnamon leaf oil flavored, was good. Next year I'll probably add some habs or cayanne. Maybe chipotle?
+ a weekend of enforced vacation from the Internet, the media, and other negative influences of my life
-burned the cheese sauce for the mac and cheese -- though later I was told that it was still usable, at the time this really got me down.
-the dulce de leche ice cream had been frozen without me. This cheesed me off at the time, which may have been low blood sugar.
- had to leave early on Sunday
- Missed the Taiko drumming -- it was on while I was on-duty for freezing

Overall, it was a good weekend.

Really? The cheese sauce for mac and cheese should have been re-done. I didn't mind it, but my husband did.

Chipotle imparts a smoky flavor which doesn't always work in sweet dairy (altho it can work with cheese). I'd start with straight habaneros or Scotch bonnets as a test run (and consider mashing them into a sauce first, for more even distribution).

Go for the chipotle… habs are overused and over-assertive for most uses. Chipotle's different and milder.

I'm glad it was overall good… and we'll talk about the other stuff later. :)

the dulce de leche kicked major ass. i didn't get a chance to vote on that (where was the board? i never saw it), so add another vote from me.

the cinnamon was good - not mouth numbing OMG (which i know is a goal) but definitely better than any other cinnamon i've ever had (not gritty, as a result of essential oils used). so, it needs more kick? perhaps a co-flavor that stimulates more tongue. clove? ginger? wasabi? mmm. perhaps a water soluable flavor would enhance the oils fighting the lipids?

the thai tea was especially smooth this year, that always would get a vote.

other flavors of note, there was a chocolate almond right next to the DdL that was strong and rich and nutty. loved it. +1 for that.

all varieties of the lemon icecreams i found were awesome. big wins. lemon curd and lemon blueberry curd and the pure lemon. awesome. +1 each.

i limited myself to 1.5 bowls this year. so i missed a lot of flavors. still, what i got was very good.

the DlD though is the most amazing new flavor, and imho, needs a large bucket, and should be yearly from now on.

I wasn't able to taste many flavors, but I luckily was able to nab a spoonful - delightful!

Try working with a smoked chipotle sauce for the cinnamon. The addition of the smoke to the flavor compliments very well.
