Baitcon from afar

I need space to think about events, and I just realised that I never got around to posting my thoughts.
All in all
We Rocked !

I thought it went incredibly well, from the Ice Cream to the band and the food came off without a hitch, not one meal a minute late(OK, that's one of my issues. The kids were great most of the time, it wasn't a hassle to try to do both mom and cook stuff. Must remember not to try to do mehndi 1 hour before a meal shift, had to wash it off before it did anything interesting. I put a tent up, by myself, in a good spot, and it was the first time I've ever been near a tent. Yea me.
All in all a very satisfying weekend, and next year I might get to play in real kitchen

yeah, you did. I'm so impresed with how far things have come over the years. How organized and efficient everything is. Maybe if I can go next year I'll even see if anything can be done about some of my food allergies. (You love a challenge, right? ;) I brought some groceries because I expected to have problems with Saturday lunch. But the curry chicken rocked. Luckily I still had them 'cause I remembered I was allergic to Chili pepper so Saturday night was a bit of a challenge.

Maybe next year I can actaully bring one of the food items. A pet project I'd been working on since November 2004 was a recipe for a Pot Luck scaled batch of "chicken korma" Average batch size was 3 quarts, varying between 2.5 and 3.5 and occasionally hitting four. I've served this at several pot lucks with amazing success.

Adding to the reasons this might be a good idea is that this recipe was designed to be served the day after when refrigerated and in fact survives freezing with no change in quality whatsoever. I think for baitcon I'd need to prepare at least three large batches.

Another feature of my recipe is that it can be prepared meatless with the meat packaged separately for those who cannot take chicken. The recipe is currently posted friends only within my journal.

I forgot to mention, I've prepared roughly SIXTY batches since november so preparing three or even 5 large batches as my offering to a Baitcon would not phase me. Frozen rock solid they could easily be transported safely in a 6 hour drive.
