I've made my first two experimental flavor batches for the year. The pear with balsamic pecans is very nice. I will want to intensify the flavor of the pears in the next batch so they compete better with the punch from the pecans. But basically that's just tinkering to get the balance right. Overall the flavor is going to be successful.
The grapefruit & Clove Sorbet is more problematic. I took
dchenes's suggestion and added Chartreuse to the mix while I was boiling the baked grapefruits with grapefruit juice, cloves, and sugar. The scent and flavor are good with the Charteuse filling in the balance of flavors nicely. Sadly, the mix has failed to freeze so far. Now, this could be because I'd already used my ice cream maker once today and the bowl just wasn't cold enough. I'm going to chill the grapefruit mix for another 48 hours and refreeze the bowl solidly before trying again. If it fails to freeze a second time then I suspect that there's too much sugar in this batch and I'll need to start again. On the positive side, the stuff would probably make a good mixer for martinis if it refuses to freeze....
