Liquid Nitrogen Ice Cream in the NYTimes!

My cousin sent me this article, which opens with a frozen lime mousse cooled with liquid nitrogen. And mentions that the world record for cooling a liter of ice cream mix is 18 seconds.
More interesting to me, though (since it's rather more available for home) was that the author manages to get mix =>ice cream in about half an hour . . . using a gallon ziplock and a bowl of salted ice.
In other news, I still haven't located my camera card reader. Once I have, or have bought one, there shall be long overdue baitcon pictures. [Completely off topic: pending Boston visit the weekend of 9/6]
