People who make Lavender ice cream, what do you use for flavor and where do you get it?

steep lavender blossoms in cream, but be careful . You must find culinary lavender, the stuff for potpourri is covered in toxic fixatives.

I've never made lavender ice cream, but you can buy dried lavender for making tea, which should work just fine.

[livejournal.com profile] sauergeek has made lavender ice cream, and has gotten lavender buds from Penzey's. I've also gotten lavender buds from Harvest.

IIRC, one key observation on infusing lavender into cream was not to press the lavender to get the last drops of cream, as that also got some unpleasant bitter flavors from the lavender. Your results may differ.

Others have supplied some sources... and I noticed last week that someone at the Kendall Sq. farmers market - and thus probably at other local ones, too - had them by the large bag next to their teas and tisanes.

The lavender buds at Penzey's in Arlington are not out on display. They're kept in back, and you have to ask for them at the counter.

And to second [livejournal.com profile] kelkyag's point: do not press the lavender. Let it drain, and then throw it out. Pressing produces some sort of bitter agent that spoils the flavor of the ice cream.
