People who make Lavender ice cream, what do you use for flavor and where do you get it?

The lavender buds at Penzey's in Arlington are not out on display. They're kept in back, and you have to ask for them at the counter.

And to second kelkyag's point: do not press the lavender. Let it drain, and then throw it out. Pressing produces some sort of bitter agent that spoils the flavor of the ice cream.
