So, the cookbook has no soy or (Non-dairy) coconut recipes in it.

I've got a co-worker asking me about such things (He's vegan).

Any of the makers reading this and want to share (and thus end up in V2 of the cookbook, too)?

The C4 - Coconut Chocolate Chocolate Chip recipe is on page 70.
There are plenty of vegan sorbet and ice recipes.

Hey, I just put in it what people sent me. I asked people and they just didn't get me the recipes. I know there have been soy and coconut recipes made, but I couldn't beat them out of people, they had to be willing to give them up willfully, and most weren't.

Maybe next time.
BTW I already have 11 more recipes for the second edition.

I was planning on perfecting the vegan mint julep soy ice cream this weekend at my b-day party, but the friend who was supposed to bring liquid nitrogen now will not be able to. I'll try to whip up a batch or two this weekend, and I'll send it when it's done. I also have to dig up my pineapple lychee sorbet recipe.

I took a can of coco-lopez, a can of coconut milk, and then filled with amaretto to 32 oz (about 4 oz worth)

Didn't freeze so well, though - there wasn't any granulated sugar and there's a lot of alcohol. But it got good reviews.

A tip for your coworker - sometimes, just by replacing the water in a sorbet recipe with soy milk (I recommend Silk), you can get a frozen dessert that is like ice milk. That's how the mint julep ended up succeeding.
