LN2 party

Inspired, of course, by Baitcon, I am hosting an LN2 ice
cream making party for my local friends this Sunday.
Anyone who's in the vicinity of Rochester, New York is
welcome; email me (my user name at pobox dotcom) for
directions.

The delivery truck has just dropped off 160 liters of
liquid nitrogen, which now sits (in a single large tank)
in my backyard.

If anyone has any tips regarding technique, safety, or
anything else, I'll be glad to have them.

"Bobbing for ice cream" may sound like a good idea, but it isn't.

remember that the LN2 not only cools the ice cream mix but also does the job of aeriation that the dasher does in normal ice cream production. Therefore one needs to fold as much of the LN2 into the mix as possible when one is stirring.

Actually, we use metal implements all the time. It's best if you can insulate the handle, of course, but it's never been a problem. In fact, you need the strength of metal utensils to stir effectively, and plastic and wood will too often break under the thermal strain.

Do NOT use a metal bowl to mix in, though. You lose too much cold (ok, gain too much heat) that way.

Expect to use about as much LN2 as ice cream mix.

If you can thoroughly chill your mix, it'll be easier to freeze.

Add the LN2 in increments.

Custard-based ice creams seem to give some of the best texture results.
