cream making party for my local friends this Sunday.
Anyone who's in the vicinity of Rochester, New York is

directions.
The delivery truck has just dropped off 160 liters of
liquid nitrogen, which now sits (in a single large tank)
in my backyard.
If anyone has any tips regarding technique, safety, or
anything else, I'll be glad to have them.

Date: 2005-08-26 03:23 pm (UTC)Do NOT use a metal bowl to mix in, though. You lose too much cold (ok, gain too much heat) that way.
Expect to use about as much LN2 as ice cream mix.
If you can thoroughly chill your mix, it'll be easier to freeze.
Add the LN2 in increments.
Custard-based ice creams seem to give some of the best texture results.
