No. Really. PLEASE! PLEASE! Carpool. If you have space in your car, offer it. If you might be willing to go with someone else, say so.

This is my first Baitcon and I'd like to contribute an ice cream flavor. I found this recipe for fiddlehead ice cream that seems appropriate but can't find any fiddleheads. Any suggestions? Presumably, they would have to be frozen or canned since it's so late in the year (if I don't do it this year, I will plan better next year).

Sometime you get it on the first try. Sometimes it never comes at all.

I'm on my third batch of pear ice cream and somehow the right flavor and texture is still eluding me. The current batch turned custard in the fridge and then turned grainy in the ice cream maker. I've tried many of the suggestions that were made previously but so far, none of them have provided a strong enough pear flavor to punch through the taste of the balsamic glazed pecans I want to put into it.

Speaking of the pecans, its so warm and humid that the batch of pecans I made refuses to dry and is sitting on my counter acting like taffy. Ugh. I took the lot of them and tossed them in a bowl in the fridge. Hopefully once they are cool enough they will harden up and crumble into small bits like they are supposed to.

As a contrast, I'm currently making a clove and orange sorbet. I've only got three quarters of the ingredients put together and already it smells spectacular. This one is going to be a knockout.

Why can't they all be this way?

Now on to the Maple Scotch Scotch Bonnet....

We've looked at Restaurant Depot, 3 Costcos, 2 BJs and several grocery stores in 3 states and we can't find bulk cous-cous. I haven't even found more than the small (feeds 3-4) boxes. The van is loading tonight and has to leave ... if anyone is willing/able to pick up 10lbs. of cous-cous at the Harvest Coop, Whole Foods, etc. and bring it to Baitcon by Saturday morning, we would be very grateful and we'd reimburse you. Reply here if you can help.

If there were infinite time and infinite freezing slots I'd just add this to my own list of
flavors to make.

Instead, I'll offer the recipe that just made me drool. (I've really got to stop googling the week before Baitcon to refine my own recipes...)

Nutella. not as a mix in or swirl, just as about 50% by weight of the ice cream itself.

Hi, just thought i'd mention that [livejournal.com profile] tomhundleyrn, who is coming with me, is, in fact, an RN, and has volunteered to be available for consult as needed through the weekend.

Also, we'll have dried lavender, some part of which is guaranteed to [livejournal.com profile] kimberlogic, dried rose petals, and a small amount each of candied rose petals and candied violets.

[livejournal.com profile] magickalpony suggested a lemon sorbet with the violet, which sounds quite exciting, if someone is up for that.

[livejournal.com profile] 42itous said I have candied hibiscus flowers to add to the mix. They're kind of chewy, so I'm planning to chop them up and either soak them or stew them beforehand.

but an almond floral flavour would be nice too


So, together, we may be able to concoct a glorious floral something or other. As for The Days of Wine and Roses, i know, and think i have on hand, the perfect wine, a moscatto rosso with a nose like roses. Hm. :)

If anyone would like fresh lavender for ice cream or other purposes, please let me know by Thursday evening. I have 6 lavender bushes in bloom right now and would be happy to share the wealth.

Last year I was able to bring a quart of raspberries from my garden, which I shared with people as they arrived on Friday, but this year the berries are ripening later, so that won't be possible.
